Mugi Miso (Japanese) means Barley Miso and this organic mugi miso from Terrasana comes in a 350g jar and is made with barley koji and is also known as soy paste with barley.
Koji (a fermentation starter) is added to cooked barley and then mixed with soybeans in wooden barrels with this maturation process taking 1 to 2 years in these barrels. This mugi is perhaps the most versatile miso in terms of taste and suitable for the preparation of various dishes.
